This recipe came about because I had friends over and was going to make waffles, but then couldn't find my recipe. So I modified my popover recipe and - wow - good waffles!
Start your waffle iron heating.
Melt the butter; I usually put it in a small bowl and pop it into the microwave for 10-20 seconds. Mix everything together vigorously for about a minute, so that bubbles form on the surface of the batter when you stop mixing it. This recipe has the virtue of being extensible in quantity. You can use up to 2 cups of milk and 2 cups of flour if you want more waffles. Just scale the flour and milk quantity evenly and the recipe will still work fine. I've never tried it above 2cups/2cups.
